TEXAS STYLE DOVE |

|
In the spirit of dove season here is a dove recipe sent to us by |
|
one our Texas Members! |
|
Bacon Wrapped Dove: |
|
6 dove cleaned and de-feathered |
|
3 jalape�os |
|
1 pkg of thick sliced smoked bacon |
|
tooth picks |
|
|
|
Slice each of the jalape�os in half. |
|
Remove center part of jalape�o and seeds. |
|
Put one slice of jalape�o in the dove�s rib cage. |
|
Wrap each dove with one slice of smoked bacon. |
|
Punch a tooth pick through dove to secure the bacon. |
|
Grill the dove for 20 min or until done to your taste. |

I've never heard this referred to as Texas Style, but we've done |
|
this for years with ducks, geese, and doves. You can also add a |
|
slice of pepperjack cheese in there and a red onion. Works with |
|
tenderized hamsteaks and back strap also. |
