strong>Menemen is a Turkish
dish which includes egg, onion, tomato and green peppers
(paprika), and spices such as ground black pepper, ground red
pepper, salt, oregano, and mint). Black or green olives can be
included as ingredients. Turkish meat products such as sucuk (a
spicy sausage) or past?rma (thinly sliced dried cured beef) can
be added, although this strays from the traditional recipe. The
eggs are scrambled. It is cooked with butter, although olive oil
may also be used. The dish is very similar to
shakshouka.</strong><strong>
/strong><strong>
enemen is
commonly eaten for breakfast and served with bread.
</strong>
strong>It\'s very easy to make (granted no one steals
your eggs) and very delicious..... Just ask Erdogan yasaran
</strong>
strong>Ingredients (serves
4):</strong><strong>
/strong><strong>
eggs
</strong><strong>
medium/large tomatoes, peeled and chopped
into small chunks </strong><strong>
long green peppers cut
into small chunks (our host uses one or two sliced blazingly hot
green chilli peppers as well, but bravery is required for this
version). Bell peppers can be used if you cant find long
slender ones. </strong><strong>
finely sliced white onions
</strong><strong>
alf a cup of olive oil </strong><strong>

and pepper to taste

the eggs in a bowl and add a little salt and pepper
</strong><strong>
/strong><strong>
arm the olive oil in a
large pan, then lightly fry the onions and peppers without
browning. After about 2 minutes add the chopped tomatoes. Cook
the mixture until all the veggies are really nice and soft
(around 7-8 minutes), and the juice has been reduced by about
half. </strong><strong>
/strong><strong>
our on the eggs and
stir continually until it begins to firm. At this point, you can
become adventurous and extend the boundaries of menemen by
adding some extra exotica (see below) should you wish. The
resulting masterpiece should be firm and juicy, not dry.
</strong><strong>
/strong><strong>
eason with salt and pepper.
</strong><strong>
/strong><strong>
erve immediately with fresh
bread the ideal accompaniment to mop it up.

additions:</strong><strong>
/strong><strong>
enemen is such a
wonderful base dish, you can add in all manner of things to take
the flavour in a variety of directions. It may upset the
purists, but feel free to ignore them and mix things up a
little. To play with the dishs texture and taste, you could add
any of the below: </strong><strong>
ome flat leaf parsley,
coriander, oregano, feta cheese, and some meaty stuff such as
sucuk (Turkish sausage), pastrami, salami, parma ham.</strong>

I am from Latin America, El Salvador to be exact and we also
have this same dish. Even though it is a breakfast dish, it can
be eaten at any time of the day. I frequently have it for dinner
as it is easy to cook and not so heavy on your stomach. It is
delicious!
