Beef Stroganoff - Crockpot
(gluten free!)
Ingredients:
1 chuck roast - bone in
2 cups beef broth
2 tsp sea salt (if broth is salted, only use 1 tsp.)
1 clove garlic, crushed
2 tbsp organic Worcestershire sauce
1 small onion, diced
5 oz sliced mushrooms
3 tbsp arrowroot powder or non-GMO cornstarch
3/4 cup sour cream
Directions:
Place chuck roast, beef broth, salt, onion, garlic, mushrooms,
and Worcestershire sauce in your crockpot.
Cook on low for 8 hours or high for 5 hours.
When finished, remove roast, shred, and set aside.
Put crockpot to high.
Mix together sour cream and arrowroot or cornstarch.
Whisk into hot liquid.
Return meat to hot liquid and cover for about 5-10 minutes to
thicken sauce.
Serve over hot egg noodles, mashed potatoes, or rice.
Finished and ready to serve!
Makes 8 1 cup servings

Gabi,
when you make this, do you defrost your roast first or just
throw it in there frozen?

I have always defrosted it. I'd guess it would take an extra
hour or so if it was frozen though

Sounds good. Greg doesn't eat beef unless it's hamburger. I
would like something like that though.
I've read that you should never place frozen meat in a crock
pot.

I've got a better homes and garden crockpot cookbook. there are
lots of recipes in there that have you put frozen meat into the
pot. so maybe it's not an issue.
