| Lemon Butter Pasta | |

| Lemon Butter Pasta | |
| 12 ounces pasta, any shape | |
| 1/4 cup (1/2 stick) butter | |
| 2 tsp. lemon zest | |
| 2 Tbsp. fresh lemon juice | |
| salt and pepper to taste | |
| Boil a large pot of salted water. | |
| Add the pasta and cook according to package directions. I | |
| undercook just a bit as I prefer my pasta al dente. | |
| Drain when done cooking.. | |
| While the pasta is cooking, melt the butter in a small saucepan. | |
| Add the lemon zest and juice. Taste and season with salt and | |
| pepper. Toss with the drained pasta and serve hot. | |
| You can grate some fresh parmesan over the pasta when you serve | |
| it and or add a bit of fresh parsley for color. | |
| I love serving this on the side of chicken dishes though I'm | |
| thinking it would be good with grilled fish, shrimp or any shell | |
| fish for that matter (we don't eat fish at my house though). | |
