Lemon Butter Pasta

Lemon Butter Pasta
12 ounces pasta, any shape
1/4 cup (1/2 stick) butter
2 tsp. lemon zest
2 Tbsp. fresh lemon juice
salt and pepper to taste
Boil a large pot of salted water.
Add the pasta and cook according to package directions. I
undercook just a bit as I prefer my pasta al dente.
Drain when done cooking..
While the pasta is cooking, melt the butter in a small saucepan.
Add the lemon zest and juice. Taste and season with salt and
pepper. Toss with the drained pasta and serve hot.
You can grate some fresh parmesan over the pasta when you serve
it and or add a bit of fresh parsley for color.
I love serving this on the side of chicken dishes though I'm
thinking it would be good with grilled fish, shrimp or any shell
fish for that matter (we don't eat fish at my house though).
