Ideas wanted for simple vegetable or salad for Christmas

Here�s the deal
We�ll be driving 3 hours then staying in a hotel on Christmas
Eve, going to sisters on Christmas Day. I booked a room called a
suite that shows a mini kitchen with a half size fridge and
decent counter space. But I�ve learned to be skeptical about
conditions of those fridges. I will have a cooler with some
stuff. I�d what I make is finished I can drop at sisters before
going on to the hotel.
I will bring my usual Swedish meatballs and can handle keeping
them cold. Might drop them at sisters anyway.
I also said I�d bring a vegetable. I�m looking for ideas for a
vegetable dish or a salad that I can either make 24 - 36 hours
ahead or that I can finish in the hotel room. It would also be
nice if it appealed to 11 and 6 year old boys. Nice but not
essential.
I�m considering a raw veg plate or some sort of salad that I can
add dressing to at the end.
I�d love ideas.
ETA: I was just informed that nephew is bringing raw veg tray
so that�s out.

I've made these several times. Doing ahead is recommended but
not necessary, and the bite size dice is also not necessary -
generally I slice as carrot coins and steam them.
They're delicious and have never not gone over well with all
ages of guests.

I�m a big fan of green salad with Brussel sprouts instead of
lettuce (I use the mandolin) and various crunchy things
(cucumber carrot shreds bell peppers even pomegranate and nuts).
The greens keep way longer than you�d expect.

I've made this salad for Christmas Eve several times. It's
actually call Ensalada de Nochebuena (Christmas Eve Salad) - I
generally increase the bed of greens for more vegetable. And
the kids can eat more of the fruit, apple and jicama and skip
the beets.

One of the comments said that you use the dressing layer to
"seal" the top. Don't use wet veggies like tomatoes or
cucumbers (which are really fruits, but I digress).
You could make this at home, drop it by your sister's house and
then toss and serve the next day. I think bacon and cheese will
make it palatable to pre-teen boys ;D

I love this one myself. My former grocery store often had it in
the deli.

I usually make a kale salad. It holds really well because the
greens are hardy and is delicious. The downside is that even the
word "kale" is unacceptable to some. I prefer Lacinato kale for
salads, because it's more tender.
The template I use is to add an aromatic like minced shallot or
red onion, dried fruit like cranberries, cherries, or golden
raisins, nuts or seeds like walnuts or sunflower seeds, and a
little cheese like some crumbled feta or even grated cheddar if
that's what I have. Lightly dressed with a vinaigrette.
It disappears, but I'm not feeding any children.

Oh I forgot about those. Used to be a regular at large family
meals decades ago. Good idea!

I like a salad with arugula, cubed honeycrisp apples (toss 'em
in lemon juice and sticker in a zip lock bag), walnuts and
radish slices. Simple dressing of yogurt/buttermilk/olive
oil/lemon juice with a little sugar, a little salt and a crapton
of poppyseeds whisks up in no time and holds together well.
It's one of my favorite winter salads.
