Roasted Asparagus

Ingredients

   1 lb asparagus spears (thick is better)
   1/2 tbsp olive oil
   2 cloves garlic, minced
   pinch kosher salt
   pinch black pepper
   drizzle lemon juice or balsamic vinegar
   grated Parmesan cheese

Directions

   - Preheat oven to 400 degrees

   - Break off tough ends of asparagus

   - Lay spears in single layer in baking dish or foil covered roasting pan

   - Drizzle olive oil over spears, roll spears until covered

   - Sprinkle minced garlic, salt, pepper

   - Cook 8-10 minutes, until lightly brown & tender

   - Drizzle with lemon juice or balsamic vinegar

   - Top with grated Parmesan cheese
