Definitely a hit!! The New York cheesecake cookies were so delicious and
didn't last long at all...definitely a keeper.
* You will need:
� 1 14 cups graham crackers, finely ground (1 km)
� 1 cup of flour
� 1 12 teaspoons baking powder
� 1 piece of soft unsalted butter (8 tablespoons)
� 12 cups packed brown sugar
� 1 egg, separated
� 3 ounces soft cream cheese
� 14 cups of granulated sugar
� Two teaspoons of lemon peel
� 1/2 teaspoon vanilla extract
* Directions :
1. Preheat the oven to 350�F first.
2. Mix graham crackers, flour, and baking powder together in a large bowl and
then in a medium bowl, beat the butter and brown sugar with an electric hand
mixer. Next, add the egg whites and beat until well combined then add in the
graham crackers and mix until combined.
3. We choose another medium bowl and whisk in the soft cream cheese with
granulated sugar, egg yolks, lemon peel and vanilla until well blended. Sit
aside.
4. Take out the cookie dough with a teaspoon of ice cream and place it on a
non-stick or parchment lined baking sheet. (You can measure the dough into
scoops of about 2 tablespoons if you don't have an ice scoop.) Then be sure
to flatten the dough slightly, pressing your thumb into the center of the
ball to create a small bowl shape. Repeat with the remaining dough. Once
done, pour the cream cheese into the gaps in the cookies.
5. Bake for 12 minutes, or until filling is just cooked through and biscuits
are slightly golden, then let cool for 5 minutes on baking paper before
removing and cooling completely on a wire rack.
