"EGG PODS"

These resemble small muffins, but are completely free of grains. I
make them in a mini muffin/cupcake pan, which makes 24 pods. Eating
several with lunch or as a snack works nicely.

Requires:

8 Eggs
1/2 cup cheddar cheese, shredded or grated
2-3 cups broccoli florets, chopped


Instructions:

Preheat oven to 350 degrees.

Lightly grease a muffin pan. I use a mini pan which makes 24 small
muffins.

Scramble eggs

Mix in broccoli florets

Spoon mixture into muffin pan

Sprinkle cheese on the top of each pod.

Bake pods for 15 minutes.

Remove from oven, allow to cool.
