     Title: Carrot Pie
Categories: Dinner pies, Vegetarian
     Yield: 6 Servings

     1    Pie crust (9");
          - pricked with a fork
     4 md Carrots; up to 5
     1 tb Oil; for sauteing
     1 c  Fresh parsley;
          - finely chopped
     5    Fresh basil leaves; up to 6,
          - chopped
          Salt and pepper; to taste
     1 tb Honey
          Fresh coconut slices
          - (optional)

 Chop and saute the carrots for 5 minutes. Barely cove with water and
 simmer until tender. Meanwhile, brown the pie crust at 300?F for 5
 to 10 minutes. Mash or blend the carrots with parsley, basil, salt,
 pepper, and honey, and spread them over the pastry. Return to the
 oven and bake at 275?F for 5 minutes more or until pie crust is
 golden. Thicker, heavier pie crusts take longer. Nice served with
 slices of fresh coconut.
