     Title: Grilled Pork With Chile Sauce

     Yield: 4 Servings

 1 1/4 lb Pork ribs, loin, or neck,
          - (600 g)

MMMMM--------------------------MARINADE-------------------------------
     2 tb Garlic; crushed
     1 tb Coriander root; crushed
   1/2 ts Black pepper; freshly ground
     2 tb Oyster sauce
     2 tb Soy sauce
     1 tb Sugar

MMMMM------------------------CHILI SAUCE-----------------------------
     6    Shallots; thinly sliced
     3 ts Chili flakes or ground red
          - pepper
 1 1/2 ts Fish sauce
     3 tb Lime juice

 Preparation time: 10 minutes Cooking time: 40 to 50 minutes

 Separate the ribs or slice the pork into 1-1/2" (4 cm) strips. Mix
 all the marinade ingredients together and marinate the pork for 1
 hour.

 While the pork is marinating, mix the chili sauce ingredients
 together and set aside.

 Grill the pork over hot charcoal or under a very hot broiler for 15
 to 20 minutes on each side, or until each side of the meat is browned.

 If using pork loin, slice thinly. Place ribs or pork slices on a
 serving dish, and serve with the Chili Sauce accompanied by steamed
 glutinous rice and sliced cucumber.
