     Title: Classic Sonofabitch Stew
Categories: Beef, Vegetables, Wine, Herbs, Potatoes
     Yield: 7 servings

     2 lb Beef chuck; in 1" cubes
     2 tb Oil
     1 lg Onion; chopped
     3 cl Garlic; minced
     2 c  Beef broth
     1 c  Red wine
14 1/2 oz Diced tomatoes; w/juices
     2 tb Tomato paste
     2    Bay leaves
     1 ts Dried thyme
     1 ts Dried rosemary
     1 ts Salt
   1/2 ts Black pepper
     4 md Potatoes; peeled, in 1" dice
     4 md Carrots; peeled, in 1" pcs
     2    Ribs celery; chopped
     1 c  Fresh or frozen peas

 Heat the oil in the Dutch oven over medium-high heat.
 Add the beef and cook until browned on all sides, about
 5-7 minutes.

 Add the onion and garlic, and cook until softened, about
 3-5 minutes.

 Pour in the beef broth, red wine, diced tomatoes, and
 tomato paste. Stir to combine.

 Add the bay leaves, thyme, rosemary, salt, and pepper.
 Stir to combine.

 Bring the mixture to a boil, then reduce the heat to low
 and cover the pot with the lid. Simmer for 1 hour.

 Add the potatoes, carrots, and celery. Stir to combine.

 Cover the pot with the lid and simmer for another 30
 minutes, or until the vegetables are tender.

 Stir in the peas and cook for another 5-10 minutes, or
 until heated through.

 Remove the bay leaves and serve hot.

 Servings: This recipe serves 6    8 people
