     Title: Redang (Beef In Spicy Coconut Curry)

     Yield: 2 Servings

   500 g  Lean beef
     1    Coconut; for 250 ml thick
          -and 650 ml thin coconut
          -milk
     1    Dried citrus (asam kandis)
     1    Turmeric leaf; knotted

MMMMM-----------------------GROUND SPICES----------------------------
     5    Curly chillies
     6    Shallots
     3 cl Garlic
 1 1/2 ts Coriander; fry without oil
     1 ts Turmeric; chopped
   1/2 tb Ginger; chopped
     1 tb Galangal; chopped
     1 ts Salt

 Mix thin coconut milk with ground spices and turmeric leaf.

 Bring to a boil.

 Add beef and bring back to a boil.

 Reduce heat and cook until the beef is slightly tender, before
 pouring in thick coconut milk.

 Continue cooking, adding dried citrus and stirring from time to time.

 Cook until the gravy is fully absorbed and oily.
