     Title: Slovak Pea And Potato Soup

     Yield: 4 Servings

     2 qt Water
     2 c  Potatoes; diced
   1/3 c  Fresh parsley; chopped
     1 ts Salt
    10 oz Pkg frozen peas -OR-
     2 c  Fresh peas
     3 ts Butter
   1/3 c  Onion; minced
     2 ts Flour

 Bring water to boil; add potatoes, parsley and salt and cook for 0
 minutes. Stir in peas. Brown onion in butter, stir in flour and brown
 lightly (this mixture is called "zaprashka"); stir into soup to
 thicken slightly. Cook until peas are done.

 Notes: Cheap to make and very tasty! A lenten favorite.

 Per serving: 96 Calories; 9 g Fat (79% calories from fat); 1 g
 Protein; 4 g Carbs; 23 mg Cholesterol; 637 mg Sodium Food Exchanges:
 1/2 Vegetable; 1-1/2 Fat
