The older I get the more I do "can opener" meals. Did this last night
for suppper:
Next time I'll add in a 14 1/2 oz can of diced tomatoes; w/chilies if
I'm doing the zippy sausage. And if I want to get fancy I'll divide the
dish between souffle plates, sprinkle the cheese over the top and pop
into the oven until the cheese is all nice and melty.
1 lb Italian sausage; zippy or
- mild
1/2 ts Italian seasoning blend; opt
1 c Water
19 oz Bag frozen cheese
- tortellini
1 c Shredded mozzarella cheese
In a large skillet, cook sausage over medium heat until
no longer pink, 5-6 minutes; crumble meat; drain. Stir
in Italian seasoning if using.
Add water and bring to a boil.
Stir in tortellini; return to a boil. Reduce heat;
simmer, covered, 3-4 minutes or until tortellini are
tender.
Remove from heat; sprinkle with cheese. Let stand,
covered, until cheese is melted.
Makes: 4 servings
