     Title: Baked Carrots
Categories: Vegetables
     Yield: 1 Batch

    20 oz Carrots; (approximately)
     2 tb Butter; melted -OR-
     2 tb Olive oil
     1 cl Garlic
   1/8 ts Cinnamon
   1/4 ts Ground cumin
   1/4 ts Curry powder
     1 ts Dried thyme
   1/4 ts Ground ginger
     2 ts Brown sugar
     1 pn Cayenne pepper
          Salt

 So, so, so good. They have been a hit and everytime I've ever made
 these and any time I've made them for someone else they have asked me
 for the recipe.

 Pre-heat oven to 400°F (200°C).

 Wash and peel the carrots.

 If your carrots vary significantly in size cut the largest ones in
 half length wise and leave the smaller ones whole and put them in an
 oven dish.

 Combine the butter, garlic, cinnamon, cumin, curry powder, thyme,
 ginger, brown sugar, and cayenne in a bowl and whisk.

 Drizzle the mixture over the top of the carrots then use your hands
 to mix it all up. Make sure all the carrots have some of the mixture
 on them then grind a little sea salt over the top.

 Tightly cover the oven dish with aluminum foil and bake in the oven
 for 40 minutes.

 After 40 minutes remove the foil and mix the carrots up a little and
 test with a fork for doneness.

 Optional: Return carrots to oven without foil for 10-15 minutes and
 let the carrots slightly brown and caramelize.
