Noodles can signify a long life, but only if they make it into the mouth
before breaking! Eating noodles is a New Year’s tradition for good luck
in many Asian countries. Soba noodles are especially important in Japan,
as their buckwheat flour base symbolizes resiliency.

Take care to keep the noodles intact!

MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Chicken Soba Noodle Toss
Categories: Poultry, Pasta, Herbs, Vegetables, Nuts
     Yield: 4 servings

     2 ts Cornstarch
   1/2 c  Chicken broth
     2 tb Brown sugar
     3 cl Garlic; minced
     1 tb Butter; melted
     1 tb Soy sauce
     1 tb Hoisin sauce
     2 ts Minced fresh gingerroot
     2 ts Rice vinegar
   1/4 ts Pepper
     6 oz Uncooked soba noodles
   3/4 lb Chicken tenderloins; diced
     4 ts Oil; divided
     3 c  Fresh broccoli stir-fry
          - blend
   1/4 c  Chopped unsalted cashews

 In a small bowl, combine the first 10 ingredients until
 blended; set aside.

 Cook noodles according to package directions. Meanwhile,
 in a large skillet or wok, stir-fry chicken in 2
 teaspoons oil until no longer pink. Remove and keep
 warm.

 Stir-fry broccoli blend in remaining 2 teaspoons oil
 until vegetables are crisp-tender, 4-6 minutes.

 Stir cornstarch mixture and add to the pan. Bring to a
 boil; cook and stir until thickened, about 2 minutes.
 Drain noodles; add to pan. Add chicken; heat through.
 Sprinkle with cashews.
