MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Chile Relleno Casserole
Categories: Casseroles, Mexican
     Yield: 4 Servings

     2 sm Cans chopped green chiles
          --OR-
     1 lg Can whole chiles
 2 2/3 c  Flour
     3 ts Baking powder
   1/4 ts Baking soda
     2 ts Salt
   1/2 c  Shortening
     4    Eggs
 1 1/2 c  Buttermilk
 1 1/2 c  Milk
     1 lb Sharp cheddar cheese; grated

 Preheat oven to 350 F. Butter a 9x13" casserole dish.

 In medium bowl, mix flour, baking powder, baking soda, and salt. Cut
 in the shortening. In a separate bowl, mix the eggs and milk. Gently
 stir the eggs and milk mixture into the flour mixture. Spread 2/3
 batter in the bottom of the casserole rish. Arrange chiles over the
 batter. Sprinkle cheese over the chiles. Pour rest of batter on top.
 Bake for 45 minutes.

 Note: Mom would roast and peel home grown chiles to make this dish.
