The original Moosewood recipe just said no "delicious" apples.  I changed it
to "red delicious" to be specific.  I don't seem to recall seeing golden
delicious in the store in recent years, so i can't speak for the grocery
store variety.  My folks planted multiple apple trees including both red and
golden delicious.  Seems to me that the home grown red delicious are better
than the store bought, because the home grown are more crisp and less
"foamy."  I actually like the home grown red delicious better than the
home grown golden delicious, but neither is my favorite apple.

I normally cook with a home grown "red gravenstein" variety that i haven't
seen anywhere else.  In the middle of the winter i'll often cook with
Granny Smith from the grocery store.
