1 c Cottage or ricotta cheese
1 c Apple; grated; packed, and
-heaping, (any kind but red
-delicious)
3/4 c Flour; (can use 1/3 c white
-and 1/4 c whole wheat)
1 tb Honey
1 ts Fresh lemon juice
1 tb Sunflower seeds or chopped
-almonds
1/2 ts Cinnamon
1 ds Nutmeg or allspice
4 Eggs; separated
1/2 ts Salt
Serve these pancakes for breakfast, brunch, or lunch. They could even
be a dessert after a light meal.
Mix everything together except egg whites. Beat these until stiff and
fold into batter. Fry pancakes in butter on both sides until brown.
Serve with maple syrup or preserves, sour cream or yogurt, fresh
fruit, cinnamon sugar. Mix and match.
