1 1/2 c Cooked rice
2 tb Olive oil
1/2 Onion; diced
3 cl Garlic; minced
3 tb Rice flour
1 cn Coconut milk
2 c Broth
2 cn Salmon; drained and flaked
2 c Frozen peas
1 c Celery; diced
1 c Nutritional yeast
1/2 ts Black pepper
1 c Crispy onions
Cook rice. Preheat oven to 400 degrees F. Lightly grease 9x13" pan.
Saute onion until softened. Stir in garlic, pepper, and flour and
cook 1 minute. Slowly pour in broth and coconut milk and bring to a
simmer, stirring constantly. Once mixture has thickened, stir in
celery, peas, nooch, and salmon. Pour over rice in the 9x13" pan.
Sprinkle fried onions over the dish. Bake uncovered for 15 to 20
minutes. Serve hot.
