1 1/2 c Sour cream
2 c Cottage cheese
1 c Cheddar; grated
1 Red onion; thinly sliced
2 Scallions; chopped
1 Green pepper; chopped

2 c Cabbage; shredded
1/2 lb Mushrooms; sliced
1 Carrot; chopped
1 ts Carraway seeds
Butter

2 c Raw whole-wheat macaroni
MMMMM---------------------------FINISH--------------------------------
2 tb Tamari
Fresh black pepper; lots
MMMMM---------------------OPTIONAL ADDITIONS--------------------------
Toasted cashews
Toasted sunflower or sesame
-seeds
Fresh spinach; chopped
MMMMM--------------------------GARNISH-------------------------------
Fresh tomatoes; sliced
Fresh basil; chopped
Preparation time: 1 1/2 hours, including baking
Combine sauce ingredients. Saute vegetables in butter. Boil pasta in
salted water until just underdone. Drain pasta and coat with butter.
Combine everything. Add 2 tb tamari sauce and lots of fresh black
pepper.
Bake in buttered casserole dish, covered, at 350 F for 40 minutes.
Serve with fresh tomato slices sprinkled with chopped basil.
