MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Roasted Potato & Green Bean Salad
Categories: Potatoes, Vegetables, Pork
     Yield: 7 servings

     6 md Red potatoes; in 1" cubes
     1 lg Red onion; in 1" pieces
   1/4 lb Fresh green beans; trimmed,
          - halved
     2 tb Olive oil
     8 sl Bacon; cooked, crumbled

MMMMM------------------------VINAIGRETTE-----------------------------
     2 tb Cider vinegar
     1 tb Minced fresh thyme
          +=OR=+
     1 ts Dried thyme
     1 tb Lemon juice
     1 tb Dijon mustard
   1/2 ts Salt
   1/4 ts Pepper
   1/4 c  Olive oil

 Set oven @ 425-|F/218-|C.

 Place potatoes, onion and green beans in a greased 15" X
 10" X 1" baking pan. Drizzle with oil; toss to coat.

 Roast 25-30 minutes or until tender, stirring twice.
 Transfer to a large bowl; add bacon. In a small bowl,
 whisk the first six vinaigrette ingredients. Gradually
 whisk in oil until blended. Pour over potato mixture;
 toss to coat. Serve warm.
