Mix water and starter. Gradually add flour until the dough is the
right consistency: soft but not too sticky. Dust a surface with flour
and knead for 5 to 10 minutes. Coat bowl with oil and return dough to
bowl. Cover with a towel and let rise for an hour or two. Divide
dough into two balls and stretch them out into pizza crusts.
