My youngest sister recently bought green mangoes and gave me some. I made
the following "Tropical Green Slaw" from recipesource.com and it turned
out well. I did not use measuring cups and i may have used too much lime
and pineapple juice. It turned out more like a salsa than a slaw. I
really enjoyed it on top of pancakes.
2 Green mangoes or papayas
1 Carrot; coarsely grated
1/2 Red bell pepper; seeded and
- thinly sliced
1 Jalapeno or serrano chile;
- or to taste,
- seeded and chopped fine
- (wear rubber gloves)
1 Clove garlic; minced
1/4 c Fresh lime juice
1/4 c Pineapple juice
1 tb Sugar
Salt and freshly ground
- black pepper
3 tb Roasted peanuts; crushed
Peel the mangoes and cut the flesh away from the pit. (If using
papaya, peel, cut in half and remove the seeds with a spoon.) Using a
food processor with the shredding attachment, shred the mango or
papaya. Alternatively, the mango or papaya can be finely julienned
using a sharp knife. In a large bowl combine the mango, carrot, red
bell pepper, chile, and garlic. In a small bowl combine the lime
juice, pineapple juice and sugar and pour over the mango mixture,
tossing to combine. Season to taste with salt and pepper. Sprinkle
with roasted peanuts.
