It's so neat to be able to do things like that. We've learned over the
years how to cook, accomodating various health issues. On our first
mission trip to VT, one young lady on the team approached us in the
grocery store when we had the cart almost full of what we needed. She
informed us then that she had certain allergies, issues, etc that
precluded her being able to eat what we'd planned. We regrouped, picked
up things like gluten free pasta and tortillas, other items that would
accomodate her but allow her to eat basically the same things we served
every body else. At the end of the week she was surprised we'd been able
to pull it off on such short notice. BTW, before we left NC, we'd asked
the group about allergies, etc and she'd never said anything then. One
young man that has been on every mission trip we've made up to VT had a
special request for me; I've remembered it every year since he first
told me and easily accomodate it.
