Definition of sorbet from the Oxford Dictionary: sor bet (noun) a dessert
consisting of frozen fruit juice or flavoured water and sugar. ARCHAIC:
an Arabian sherbet.

So, yeah, it needs the sugar or one of the direct granulated replacement
"sweeteners" like Splenda.

Here's another sorbet I like to make when strawberries are "in" and I
can pick my own.

MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Strawberry Sorbet
Categories: Five, Fruits, Citrus, I scream
     Yield: 6 servings

     1    Whole lemon; seeded, rough
          - chopped
     2 c  Sugar
     2 lb Strawberries; hulled
          Juice of 1 to 2 lemons

 Place the chopped lemon and sugar in a food processor,
 and pulse until combined. Transfer to a bowl.

 Puree the strawberries in a food processor, and add to
 the lemon mixture, along with the juice of 1 lemon.
 Taste and add more juice as desired. The lemon flavor
 should be intense but should not overpower the
 strawberries. Pour the mixture into an ice cream machine
 and churn until frozen.

 UDD NOTE: The sweet of the strawberries and sugar, the
 tart/bitter of the lemon all work together beautifully.
