     Title: Red Lentil Dal
Categories: Indian
     Yield: 4 servings

 2 1/4 c  Vegetable broth;
          -(up to 2 1/2)
     1 c  Red lentils; sorted and
          -rinsed
     1    Onion
     2    Cloves garlic; minced
     1 tb Tomato paste; (canned
          -tomatoes)
   1/2 c  Light coconut milk
     2 ts Fresh lime juice
     2 ts Red pepper flakes
   1/4 ts Chili powder
     1 ts Ground cumin
     1 ts Ground turmeric
     1 ts Curry powder
     1 ts Garam masala
   1/4 ts Ground coriander
     1 ts Cumin seeds
     1 ts Fenugreek seeds
     1 ts Mustard seeds

 Bring broth and lentils to boil in pot over high heat. Reduce heat to
 medium-low, partially cover and simmer 20 minutes, or until lentils
 are tender. Cover, and remove from heat.

 Heat oil. Add fungreek, mustard, and cumin seeds. Wait until seeds
 start to pop. Add onion, garlic, and red pepper; saute. Add ground
 coriander, red pepper, chili powder, turmeric, ground cumin, curry
 powder. Cook 3 minutes, stirring constantly. Add tomato paste, and
 cook 3 minutes, stirring constantly. Add coconut milk and lentils,
 and cook 3 more minutes. Add garam masalam.

 Season to taste with salt and pepper, and stir in lime juice. Serve
 over rice.
