MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Roast Pork & Black Bean Chilli

     Yield: 4 Servings

     2 tb Extra virgin olive oil(EVOO)
     1 lg Onion; chopped
     3 cl Garlic; chopped or grated
     1 lg Red bell pepper; chopped
          Salt & pepper
     2 tb Chilli spice
     1 tb Ground cumin
     1    Bay leaf
     1 c  Beer; NOT LITE *
     3 c  Leftover gravy
    30 oz (2 cans) black beans; drain
     6 c  Leftover roast pork; chopped
          - in bite-size pieces

MMMMM---------------------OPTIONAL GARNISHES--------------------------
          Zest of 1 lime
     2 c  Crushed corn tortilla chips
          +=OR=+
          Oyster crackers
          Sour cream

 Heat a large pot over medium-high heat with two turns of
 the pan of EVOO, about two tablespoons. Add the onions,
 garlic, red bell pepper, salt, pepper, chilli spice,
 ground cumin and bay leaf. Cook, stirring frequently,
 for 3-4 minutes, until the veggies start to get tender.

 Add the beer and continue to cook for 2-3 more minutes.

 Add leftover gravy and black beans and bring up to a
 simmer. Add the cooked pork and cook to heat the pieces
 through, just a couple of minutes.

 Serve the chilli in bowls. Top with some of the crushed
 tortillas, lime zest and a dollop of sour cream.

 Makes 4 servings

 * UDD notes: Use a beer you like. Put a cup in the dish
 and quaff the balance. I usually skip the lime zest.
 I've also used shredded yellow cheese and diced raw
 onion as garnishes -- to good effect.
