Stirring bread cubes into a fruited custard instead of using a crumb
or streusel topping sounds unusual. But I think I shall try it next
time I have canned pineapple in the house. I just discovered five
very similar recipes in my recipe collection so you're not the only
one to like it!

Here's another way of doing it, but without the bread:

     Title: Baked Pineapple
Categories: Breakfast, Casseroles, Fruit, Eggs, Spice
     Yield: 6 Servings

     2 tb Cornstarch
   1/4 c  Water
     2    Eggs; beaten
    15 oz Crushed pineapple;undrained
   1/2 c  Sugar
     1 ts Vanilla extract
          Butter
          Ground cinnamon

 Combine cornstarch and water; stir until smooth. Add eggs, and
 blend well. Add pineapple, sugar, and vanilla; mix well. Pour into
 a lightly greased 1 1/2-quart casserole; dot with butter, and
 sprinkle with cinnamon. Bake at 350 for 1 hour.
