DS> Here is what we always have at our Thanksgiving. I really like it.
DS> It is served with the dinner, but could be a desert.
DS> Title: Scallop Pineapple (Norma)
DS> Stir in Pineapple and bread cubes.
Stirring bread cubes into a fruited custard instead of using a crumb
or streusel topping sounds unusual. But I think I shall try it next
time I have canned pineapple in the house. I just discovered five
very similar recipes in my recipe collection so you're not the only
one to like it!
Here's another way of doing it, but without the bread:
2 tb Cornstarch
1/4 c Water
2 Eggs; beaten
15 oz Crushed pineapple;undrained
1/2 c Sugar
1 ts Vanilla extract
Butter
Ground cinnamon
Combine cornstarch and water; stir until smooth. Add eggs, and
blend well. Add pineapple, sugar, and vanilla; mix well. Pour into
a lightly greased 1 1/2-quart casserole; dot with butter, and
sprinkle with cinnamon. Bake at 350 for 1 hour.
