DD> decent waitstaff is hard to find (at) U$4.35/hr

Well of course it is!

Wait staff here make minimum wage: $14.59 per hour plus tips. Fast
food workers who generally don't earn tips are getting $17 at most
places and the local McDonald's is up to $18 plus a benefits
package. That extra dollar gets them the best, fastest, most
dependable, and pleasant workers in the city.

Here's a current ad from our really popular, award winning brew pub.
The young, hip waiters can hit $300 in tips nightly while
socialising with their peer group and maybe $500 on Friday and Sat.
Dishwashing isn't fun or glamourous and doesn't earn tips so the pub
is offering: "NWT Brewing Company: Part-time/Full-time Dishwasher
needed! We currently pay $23/hour, a free shift meal, staff
discounts on food, beer and merchandise, company events, and health
benefits for full-time."  Every time the dishwasher quits they raise
the wage one more buck!

MMMMM----- Recipe via Meal-Master (tm) v8.06

Title: Chalupas De Queso De Cabra (Chalupas with Goat's Cheese)
Categories: Mexican, Cheese, Beans, Tortillas, Corn
     Yield: 4 Servings

 1 1/2 lb Tortilla masa
    10 oz Goat's cheese, crumbled
1/2 ts Salt, or to taste
     4 tb Olive oil
     2    Onions, minced
     2    Cloves garlic, minced
     8 oz Tomatoes, roasted, peeled
          And chopped
1 c  Cooked pinto or black beans,
          Drained and mashed.
     1    Head romaine lettuce,
          Shredded

Knead the tortillas masa with half the goat's cheese and the salt
until uniform in texture, and color. Divide the dough into 30 (1 oz.)
oblong balls and flatten each into 1/8 inch oval tortillas.  Cook on
a hot cast iron pan or griddle over medium heat for 1 to 2 minutes on
each side until they are golden brown.  As soon as they are cool
enough to handle, pinch up the sides to form a ridge 1/4 inch high.
Set aside while making the bean paste.

Heat the oil in a large frying pan over medium heat and saute the
onions and garlic until translucent.  Add the tomatoes and a little
salt and cook for about 5 minutes.  Add the beans and cook, stirring,
until they have dried to the consistency of a paste.

To serve, warm the tortillas on a cast iron griddle or pan, and
spread a little bean paste on them.  Top with remaining goat's cheese
 and sprinkle with lettuce.
