I would enter the anything goes catagory if I ever did a chili contest.
I'll have to keep track of what I use in mine... the only recipe I have
is Andrea's copycat of wendy's chilli.

     Title: Wendy's Chili Clone (Andrea's)
Categories: Crockpot
     Yield: 6      Servings

     1 lb Ground Beef
     2 c  Beef Broth
   1/4 c  Strained Tomatoes
   1/2 T  Chili Powder
     2 t  Minced Garlic
     1 T  Tex Mex Seasoning
 1 1/2 c  Celery,Chopped
     1 c  Onion,Chopped
     1 c  Mushroom,Chopped
     1 c  Red Bell Peppers,Chopped

[Note: Andrea's slow cooked chili.  You can add beans if you wish and it
will be a pretty darn close clone of the chili Wendy's serves in Canada.

Brown the beef first, add to slow cooker, then add vegetables and
seasoning.  Turn slow cooker to high for 4 hours
and leave on warm setting after that.  Serve and enjoy.
