1 c Corn meal
1 c Flour
1/4 c Sugar
4 ts Baking powder
1/2 ts Salt
1 c Milk
1 Egg
1/4 c Shortening
(I used peanut oil)
Combine corn meal, flour, sugar, baking powder and salt. Add milk,
egg, and shortening. Beat until fairly smooth, about 1 minute. Turn
batter into a greased 8-inch baking pan, and bake at 425 for 20 to 25
minutes.
Batter can also be used for muffins or corn sticks. Bake about 15 or
20 minutes.
Quaker Oats - This is the recipe that used to be on their corn meal
boxes until they suddenly decided to change it (for the worse, IMO)
in the 1990's.
