13 July 1568 - Dean of St. Paul's London, Alexander Nowell perfects a
way to bottle beer. Dr Nowell is said to have accidentally invented
bottled beer in Hertfordshire, England in 1568. It’s said that a
bottle filled with beer and sealed was left next to a river after a
fishing excursion. The doctor returned several days later to find a
carbonated beer as a result of secondary fermentation.

     Title: Otto's Beer Cheese Soup

     Yield: 9 Servings

   1/2 c  Butter
     1 md Yellow onion; chopped
   1/2 c  Chopped carrot
   1/2 c  Chopped celery
     1 c  All-purpose flour
     2 c  Chicken broth
    12 oz Beer; NOT LITE
     7 oz Extra-sharp Cheddar;
          - shredded
     7 oz Processed Emmenthaler
          - cheese; shredded
     2 c  Half & half
   1/2 ts Salt
   1/2 ts Dry mustard
   1/2 ts Worcestershire sauce
     1 lb Smoked sausage

 Melt butter in a stockpot over medium heat. Add chopped
 onion, carrot, and celery. Saute until softened. Add
 flour. Cook for about 5 minutes, stirring often. Add
 chicken broth and beer. Heat until it comes to a boil.

 Slowly add cheese while stirring until just boiling and
 smooth. Add half-and-half, salt, dry mustard, and
 Worcestershire sauce. Reduce heat to low and cook until
 soup has thickened.

 Cut smoked sausage into 1/2" pieces and place in a
 saucepan. Saute sausage over medium heat until heated
 through. It will probably take about 5 to 7 minutes.

 Add sausage to the soup, transfer to a large serving
 bowl and serve hot.

 Yield: 8 to 10 servings
