My latest experiments have been with Spirit Hills honey wines.
Spirit Hills is a small winery in Alberta. You can check it out
here:
https://www.spirithillswinery.com. I currently have a bottle
of their rose petal wine open. I wasn't crazy about it straight up
as wine. It's too sweet to be a dinner wine, not sweet enough to be
a dessert wine. and it had a very subdued taste and bouquet. But it
comes into it's own as a secondary flavouring in cocktails.
Their suggested generic formula was:
2 oz one of their wines
1 oz Sprite,7-Up or a cheap sparkling wine
1/2 oz vodka, gin, tequila or white or amber rum
1/4 oz lemon or lime juice or
1/2 oz orange juice
I just made one with:
2 oz Wild Rosy wine
1 oz gin
1 tsp lemon juice an
on the rocks and was pleased with the result.
It was also nice in a highball of 2 oz wine and 8 oz 7-Up with ice
on a hot day instead of a beer.
Next up I plan to blend some with Galliano or Cassis plus gin or
rum. One of those four permutations ought to work!
