Spinach is a very delicate green and so easily overcooked. Canned
spinach is nasty: grossly overcooked from the canning process,
off-putting greyish-green and mushy. No wonder kids hate it.
And that recipe calls for another 25 minutes of additional cooking!
Try this instead: cook the pasta in lightly salted water, then
drain. Heat the tomato juice to simmering, not quite a full boil
and add the dried herbs and let them steep 5 minutes. Then add the
pasta and chopped fresh spinach, heat just 2-3 more minutes until
the spinach is just wilted. If fresh spinach is too pricey settle
for frozen if you have to, but never canned.
My Loblaws no longer carries canned spinach as nobody buys it
anymore.
