We all love tomatoes, aren't we? Especially sun ripe fresh tomatoes. But are we willing to go through all the trouble to grow them ourself?

  Probably not, so we buy fresh tomatoes at the store. Big mistake. Those are a far cry from sun ripe tomatoes. They are picked while still green, and are expected to "ripen" in the transport. A transport that can take weeks, and on it's way is passing more than half a dozen middlemen with a final cost that reflects it. Canned tomatoes cost just a fraction of those travellers (with something like a 20-30% throwaway rate when expired at the store).

  But you actually can buy the real deal. At least I can here in Sweden. Buy canned tomatoes! From a reliable producer, they are picked when they are perfectly ripe, and within hours they are processed and stored in cans or bottles. And then they last for a very long time.

  Just the other day, I bought a new batch (I prefer Mutti Passata, with 99.5% tomatoes) and looking carefully at the bottle, with a screw cork, I can see that it has an expiry date of 2025/02/01. In room temperature, opened. How long does your "fresh" tomatoes last?
