MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Skillet Tex-Mex Pork
Categories: Pork, Vegetables
     Yield: 6 servings

     1 lb Boneless pork; in 1" cubes
     2 cl Garlic; minced
 1 1/3 c  Fine chopped onion
     1 c  Chopped bell pepper
     1 c  Chopped celery
    10 oz Can diced tomatoes w/green
          - chilies (Ro*Tel)
    15 oz Can yellow hominy; rinsed,
          - drained

 Coat a large nonstick skillet with cooking spray. Over
 medium-high heat, cook pork, browning on all sides.
 Remove from skillet.

 Add garlic, onion, bell pepper, and celery to skillet;
 cook on medium heat until vegetables become tender. Add
 tomatoes and pork and bring to a boil. Reduce heat to
 low and simmer, covered, about 40 minutes, or until pork
 becomes very tender.

 Add hominy, heat through, and serve.
