# Preface

Welcome to the fourteenth issue of Circumlunar Transmissions.  Probably.  Maybe
you missed a few of those.  Maybe I did, too.  Not to worry.  The important
thing is that we're here now, and there's stuff here you can read.  We'll figure
out the numbers later.

The theme for this issue is noodles.  I invite you to read these pieces, and
confront the noodleness in each.  I know I did.  For I believe only through
compassionately honoring the noodles of others, can I hope to integrate the
noodles within me.

You will be joining solderpunk for a journey to remote forgotten places and
times in history, to consider noodles now forgotten, consumed in utter darkness
and isolation.  You will leap along with Katolaz who follows the noodles of
colonialism and globalism, and how we re-orient ourselves to our own cultures
and food -- noodles or otherwise.  In my advice column, you'll see a story about
pancakes, which of course are basically noodles. Except round, and with milk,
and baking powder. Basically the same.  Finally, we have a photo of solderpunk's
table radio schematic, mashed up with some cars.  Reflect on the noodley nature
of urban/human geography which we project even into our household products.

So there you go.  Metaphorical and literal noodles.  Fill your boots.  With
noodles.  Wow, that would sure be a sensory experience... hmmm.  Tell you what,
I'll report back on that one next time.

Noodles

2 to 2-1/2 cups all-purpose flour
1/2 teaspoon salt
3 large eggs, lightly beaten
1 tablespoon cold water
1 tablespoon canola oil

1. Place 2 cups flour and salt on a pastry board or in a deep bowl. Make a well
in a center of the flour; add eggs and water. Gradually mix with hands or a
wooden spoon until well blended.

2. Gather into a ball and knead on a floured surface until smooth, about 10
minutes. If necessary, add remaining flour to keep dough from sticking to
surface or hands. Divide the dough into thirds. On a lightly floured surface,
roll each section into a paper-thin rectangle. Dust top of dough with flour to
prevent sticking while rolling. Trim the edges and flour both sides of dough.

3. Roll dough, jelly-roll style. Using a sharp knife, cut 1/4-in. slices.
Unroll noodles and allow to dry on paper towels before cooking.

4. To cook, bring salted water to a rapid boil. Add 1 tablespoon oil to the
water; drop noodles into water and cook until tender but not soft, about 7-10
minutes.

Freeze uncooked noodles in serving-size portions to enjoy months later. Defrost
and cook according to directions above.
