 Mascarpone  . . . . . . . . . . . . . . . . . 300g
 Eggs, fresh . . . . . . . . . . . . . . . . . 3
 White sugar . . . . . . . . . . . . . . . . . 70g
 Freshly made coffee . . . . . . . . . . . . . Plenty
 Cocoa . . . . . . . . . . . . . . . . . . . . 20g

DIRECTIONS

 Split yolks and whites.  Beat the egg white until it stiff.

 Mix the yolks with sugar, until the mixture is creamy.  Add the mascarpone
 and keep mixing.  Mix in the stiff egg whites.

 Dip the Savoiardi in the coffee (for just a moment).

 Assemble the Tiramisu and cover with cocoa.
