For incoming BinkP sessions, the BinkIT activity is logged where your "services" activity is logged. In Windows, that'd be in the "Services" window of the Synchronet control planel. Like this (copy/pasted from sbbsctrl):
 9/14  02:45:44p  8116 BINKP connection accepted from: 67.180.133.226 port 62645
 9/14  02:45:45p  8116 BINKP Hostname: c-67-180-133-226.hsd1.ca.comcast.net [67.180.133.226]
 9/14  02:45:47p  8116 BINKP BinkIT/2.27 invoked with options:
 9/14  02:45:47p  8116 BINKP JSBinkP/1.120 inbound connection from 67.180.133.226:62645
 9/14  02:45:48p  8116 BINKP Peer version: BinkIT/2.27,JSBinkP/1.118,sbbs3.17c/Win32 binkp/1.1
 9/14  02:45:48p  8116 BINKP Remote addresses: 1:10/1@fidonet 1:10/0@fidonet 1:218/700@fidonet 1:218/1@fidonet 1:218/0@fidonet 46:1/115@agoranet 10:102/6@araknet 21:4/122@fsxnet 618:300/16@micronet 618:300/1@micronet 700:100/20@spooknet 9:91/4@survnet
 9/14  02:45:48p  8116 BINKP Inbound session for: 1:218/700@fidonet
 9/14  02:45:48p  8116 BINKP CRAM-MD5 password match for 1:218/700@fidonet
 9/14  02:45:49p  8116 BINKP service thread terminated (0 clients remain, 0 total, 983 served)

On *nix, this is typically found in your syslog output when running sbbs daemonized.

For outgoing BinkP sessions, the BinkIT activity is found where your "Events" are logged, on Windows, that'd be the "Events" window of the Synchronet Control Panel, like this:

9/14  02:38:00p  Running timed event: BINKPOLL
 9/14  02:38:01p  BINKPOLL BinkIT/2.27 invoked with options: -p
9/14  02:38:04p  BINKPOLL Attempting poll for node 1:218/700@fidonet
 9/14  02:38:04p  BINKPOLL JSBinkP/1.120 callout to 1:218/700@fidonet started
 9/14  02:38:04p  BINKPOLL Connecting to 1:218/700@fidonet at f700.n218.z1.binkp.net:24554
 9/14  02:38:06p  BINKPOLL Peer version: BinkIT/2.27,JSBinkP/1.118,sbbs3.17c/Win32 binkp/1.1
9/14  02:38:06p  BINKPOLL Authentication successful: secure
9/14  02:38:06p  BINKPOLL Attempting poll for node 1:103/13@fidonet
 9/14  02:38:06p  BINKPOLL JSBinkP/1.120 callout to 1:103/13@fidonet started
 9/14  02:38:06p  BINKPOLL Connecting to 1:103/13@fidonet at f13.n103.z1.binkp.net:24554
 9/14  02:38:06p  BINKPOLL Peer version: BinkIT/2.27,JSBinkP/1.121,sbbs3.17c/FreeBSD binkp/1.1
9/14  02:38:06p  BINKPOLL Authentication successful: secure
 9/14  02:38:06p  Timed event: BINKPOLL returned 0

You can adjust the logging verbosity by changing the LogLevel value either in your sbbs.ini or using the controls in sbbsctrl.
