Title: Latkes

Yield: 8 servings
30 oz Bag shredded potatoes;
- thawed, patted dry
1 md Onion; diced fine
2 lg Eggs; lightly beaten
1 ts Kosher salt
1/4 ts Pepper
1/2 ts Baking powder
3 tb Oil
1/4 c A-P flour
Sour cream; to serve
Applesauce; to serve
In a large mixing bowl, place potatoes, onion, eggs,
salt, pepper, flour and baking soda. Mix until just
combined.
In a large skillet, heat oil over medium heat. Working
in batches, add 1/3 cup of mixture to hot oil and press
down to flatten. Do not overcrowd skillet. Cook 3-5
minutes per side until golden brown. Keep warm in oven
while cooking additional batches.
Serve immediately with applesauce or sour cream.
MAKES: 8 servings
