MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Hummingbird Cake
Categories: Cakes
     Yield: 1 Cake

     2 md Bananas; up to 3, overripe
          -and smashed
   1/4 c  Oil
   1/2 c  Agave nectar, honey, or
          -maple syrup
     4    Eggs
   3/4 c  Crushed pineapple; lightly
          -drained
     2 ts Vanilla extract
     3 c  Almond flour
   1/2 ts Salt
     2 ts Baking soda
   3/4 c  Candied pecans; chopped
          -(optional)
     4 c  Whipped cream; for frosting
          -(optional)

 Preparation time: 10 minutes
 Cooling time: 35 minutes
 Additional time: 10 minutes
 Total time: 55 minutes

 Preheat oven to 350°F (180°C). Grease two 8" cake pans; set aside.

 Place all ingredients into a large mixing bowl and mix until
 combined. You don't need to separate the dry and wet ingredients for
 this recipe.

 Divide batter between the two prepared cake pans. Smooth the top of
 the batter.

 Bake for 32 to 35 minutes or until the top starts to darken and the
 center is set. The cakes will be a darker, but golden brown.

 Remove from the oven and let cool for 10 minutes before transferring
 to a wire rack to cool completely.

 Once cool, frost the tops of the cakes (if desired), and stack them.
