MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Spinach Souffle
Categories: Spinach, Vegetables
     Yield: 1 Batch

     1 c  Heavy cream
     3 lg Eggs
    20 oz Frozen chopped spinach;
          -thawed and squeeze out
          -water
   1/2 c  Parmesan cheese; grated
     2 tb Flour
   1/4 ts Ground nutmeg
   1/8 ts Cayenne pepper
   1/2 ts Salt
   1/4 ts Black pepper

 Preheat oven to 350°F degrees spray an 8×8" baking dish with
 vegetable oil spray.

 With a whisk or a hand mixer in a large bowl, beat the heavy cream
 and eggs for 2 to 3 minutes until foamy.

 Add in the spinach, parmesan cheese, flour, nutmeg, cayenne pepper,
 salt, and pepper and whisk until well combined.

 Add the mixture to the baking dish and bake for 30 to 35 minutes,
 until it is set in the center and a toothpick comes out clean.

 Looks tasty, but it's not a souffle, which needs the eggs to be
 separated and the whites beaten to (IIRC) stiff peaks.

 That's what they call it so that is what I call it. All I know is
 so-called Spinach Souffle is tasty!
