Here is a basic pickled egg recipe, it is not intended that
this recipe be used to make pickled eggs that would last in
un-refridgerated storage. After pickleing it has been suggested
that the eggs sit for one week and be eaten before 4 weeks. I would
think that this should be safe enough, treat them as hard boiled eggs
and you cant go wrong.If one wanted to have a longer shelf life
especially
un-refridgerated, I think you might need to look at a pressure cooker
method.
1 quart vinegar
1 cup water
1 large onion sliced
1 small jar hot peppers
A list of seasonings to try add to taste
peppercorns
allspice
tobassco
dill
coriander
another addition possibility that I enjoy
1 can sliced beets
1. Hard boil eggs, put in container (jar) after shell is removed.
2. Take remaining ingredients and mix together, bring to a boil.
3. Pour hot brine over eggs in the jar and cap. Let cool down a little
then put in fridge for 1 week.
