Banana Pudding Cookie Bars

Ingredients

Crust

3 cups vanilla wafer crumbs
_ cup unsalted butter, melted

Filling

2� cups all purpose flour
1 teaspoon baking soda
� teaspoon salt
� cup granulated sugar
_ cup packed brown sugar
1 cup unsalted butter, room temperature
1 (3.4-ounce) package instant banana pudding mix
2 eggs
1 teaspoon vanilla extract
1 cup coarsely chopped vanilla wafers
2 cups white chocolate chips, divided


Directions

1. Preheat oven to 350 degrees Fahrenheit.

2. Grease a 9- by 13-inch baking pan.

3. In a medium bowl, stir together wafer crumbs and butter until mixture
resembles wet sand. Press mixture into bottom of pan and bake 7 to 9 minutes.

4. Remove from oven, then sprinkle with 1 cup of white chocolate chips. Once
melted, spread into an even layer. Set aside

5. In a medium bowl, whisk flour, baking soda, and salt. Set aside.

6. In a stand mixer fitted with paddle attachment, cream sugars and butter
until light and fluffy, about 3 minutes. Add pudding mix, eggs, and vanilla.
Beat until smooth. Add flour mixture and mix on low speed just to combine. Fold
in wafers and white chocolate chips with a rubber spatula.

7. Place cookie dough on parchment paper and form into a 9-by-13-inch
rectangle. Transfer cooking dough to pan, on top of white chocolate layer. Use
fingers to press into shape, fully covering surface. Bake 12 to 14 minutes.

8. Let bars cool completely. Cut and serve.
