Filling:
4 lg Cooking apples -- up to 5,
- cut in large slices
2 tb Peach or apricot jam -- up to
- 3 tb
1 Lemon -- zest of, grated
1 tb Sugar
Topping:
1 Orange -- juice and zest of,
- divided
1 Lemon -- juice and zest of,
- divided
3 tb Apricot or peach jam
3 tb Sugar
1/2 c Water
Finish:
1/3 c Blanched almonds -- slivered,
- toasted
Confectioner's sugar
Peel, core, and cook apples in water to cover until tender. Drain and
place in pan with jam lemon rind and sugar. Cook slowly until soft.
Place this filling between each of 12 crepes, piling one crepe on top
of the other like a cake. Cut into 6 pie shaped wedges.
Topping:
Combine the orange and lemon rinds, orange and lemon juice, jam,
sugar, and water.
Freeze the filled crepes and the topping separately.
To Serve:
Defrost both; reheat the crepes in a 350°F oven. Cook the topping in
a pan until syrupy in consistency. Pour over heated crepes and
sprinkle with almonds. Dust with the confectioner's sugar.
