Title: Hot And Sour Pea Soup

Yield: 6 Servings
2 c Sugar snap peas
1 sm Bell pepper; seeded,
- finely chopped
2 tb Oil; for sautéing
1/2 c Water chestnuts; sliced
2 c Fresh ginger; grated
1/8 ts Chili powder
4 c Water or vegetable broth
2 ts Honey
2 tb Cider vinegar
1 tb Soy sauce
Sauté the peas and bell pepper in the oil until bright green. Remove
from oil and sauté the water chestnuts, ginger, and chili powder
briefly. Cover with water and add honey, vinegar, and soy sauce.
Bring to a boil and re-add vegetables. Season to taste with salt and
pepper and serve.
