     Title: Tropical Veggie Quinoa Bowl With Citrus-Basil Dressing

     Yield: 6 Servings

     2 c  Vegetable broth
     1 c  Quinoa; rinsed
     2 md Mangoes; peeled, diced
     1 md Ripe avocado; peeled, cubed
     1 c  Cherry tomatoes; halved
     1 c  Cucumber; peeled, chopped
     1 c  Red ball pepper; chopped
   1/4 c  Red onion; fine diced
   1/4 c  Fresh cilantro; minced

MMMMM--------------------CITRUS MINT DRESSING-------------------------
   1/2 c  Orange juice
   1/4 c  Olive oil
   1/4 c  Fresh mint; chopped
     2 tb Fresh lime juice
     1 tb Honey
     1 ts Dijon mustard
   1/8 ts Salt
   1/8 ts Pepper

MMMMM--------------------------TOPPINGS-------------------------------
   1/4 c  Coconut flakes; toasted
   1/4 c  Pepitas

 In a small saucepan, bring broth to a boil. Add quinoa. Reduce
 heat; simmer, covered, until liquid is absorbed, 12 to 15 minutes.
 Remove from heat; fluff with a fork and cool completely.

 Add quinoa to a large bowl with mangoes, avocado, tomato, cucumber,
 red pepper, onion, and cilantro. Toss to combine.

 In a small bowl, whisk together the dressing ingredients until well
 combined. Pour over quinoa mixture; coat evenly. Divide among bowls
 to serve; top with coconut and pepitas.
