1 1/2 pounds fresh green beans -- cut in half
3/4 cup olive oil
1/2 cup packed mint leaves
1/4 cup white vinegar
3/4 teaspoon salt
1/4 teaspoon ground pepper
1/2 teaspoon minced garlic
1 cup chopped walnuts
1 cup diced red onion
1 cup crumbled feta cheese
Bring 4 quarts of water to boil. Add green beans; cook until
tender-crisp about 4 minutes. Drain well and immerse in ice water.
Drain and pat dry.
Finely chop mint leaves. Combine mint, oil, vinegar, salt, pepper,
garlic in processor and blend well. Refrigerate.
Arrange beans in shallow glass serving bowl. Sprinkle with nuts and
onions. Just before serving, pour dressing over and toss.
