Title: Garlicky Herb Marinade

Yield: 1 Cup
3 cl Garlic; chopped
1/2 c Low-sodium tamari
1/4 c Olive oil
1/4 c White wine vinegar
1/4 ts Salt
2 tb Fresh tarragon; minced
1 tb Fresh basil; minced
1 tb Fresh chervil; minced
I especially like to use this marinade for tofu or portobello
mushrooms. Sometimes I'll feature one herb prominently, and other
times I'll include a pinch of virtually every herb in my garden. Feel
free to vary the type of erbs according to personal preference and
availability--you'll need 1/4 cup of minced fresh herbs in total.
In a small bowl, combine the garlic, tamari, olive oil, vinegar, and
salt. Whisk until well blended. Stir in the tarragon, basil, and
chervil. Cover and refrigerate until ready to use. Be sure to use
this marinade the same day you make it to ensure the fresh taste of
the herbs.
